No need for a beginner league. Just join one! I can help you out with tips/instructions. It's a lot of fun, and pretty easy once you get the hang of it.
The Basics of Fantasy Football:
Each player drafts a "team" made up of varying positions. This typically goes along the lines of:
2 Quarterbacks
3 Running backs
4 Wide Receivers
1-2 Tight Ends (note: sometimes there's a flex WR/TE spot or two, such that you draft 3 WRs, 1 TE, and 1-2 that could be WR or TE).
1-2 Kickers
1-2 Team Defenses
Sometimes 2-4 Individual Defensive Players
Typically, each week you will have some players on the bench and you will play the following positions:
1 QB
2 RB
3 WR
1 TE
1 PK
1 DEF
Note that each position is generally for an individual, except the defense. So, the players you start (depending on who you draft) might look like this:

1 point for an extra point kick
-1 point for a fumble or thrown interception
-2 points for a safety
Defensive points:
1 point for fumble recovery or interception
2 points for a safety
6 points for TD
extra points for keeping the score low. i.e., 10 points for keeping opponent to 0 points, 7 for keeping them at 6 or less, 4 points for 7-10 opponent points, etc. Special teams are also normally included in a team defense, so say...the Browns punt to the Ravens, and the Ravens return it for a touchdown, that counts as 6 points for Ravens defense in the model above.
SO...that's basically how a team works, though each league will be different on the specifics. For example, if you have individual defensive players along with a team defense, they'll get points for things like sacks and tackles in addition to interceptions, fumble recoveries, and touchdowns/safeties.
How about the draft?
Well, there are two basic things to think about with the draft. One is rankings, the other is bye weeks. A lot of Fantasy Gurus will put together a list of the Top 200 fantasy picks. These are generally the order in which said gurus expect players to be drafted, regardless of position. Then there's individual position rankings, which are sometimes helpful if you're not sure what to pick on a given round.
A lot of people tend to follow some sort of schema, like...draft 2 RBs, then a QB, then a WR, etc. There's a fair amount of strategy in it, but there's also a heck of a lot of blind luck. I had Tom Brady in two of my leagues last year. GOOD ON ME! The best drafting in the world can easily be overcome by injuries and happenstance, so the trick is to just try to keep your team balanced.
A good way to do this is to go beyond the Top 200 and look at, say, the top 25-50 in each position. Most people draft a RB in the first round, but you may want to snipe the top QB if he's available. Likewise, if there's a defense that you think will really kick some butt this year, you may want to draft them in, say, round 5 or 6, whereas most people will be drafting WRs, TEs, or whatnot.
Before you get turned off by all this, keep in mind that I missed two of my drafts last year and had to let the Yahoo Top 200 auto-draft all of my picks for me, and those teams were just fine, too. It's totally okay to just go with a list and trade up/acquire hidden gems throughout the season.

Sure thing. The thing I really like about fantasy football is that it gives me a reason to watch almost any game. Chances are, I've got a player in one of my leagues. It really makes football season that much more fun for me, though I'm not quite sure my girlfriend sees it the same way. I've just gotta get her to join a league, too.

Gulph posted a TON of good info, but no matter what anyone ever tells you, there's no real value in trying to get a QB in the first 3 or 4 rounds. It's a rookie move and I laugh really hard at anyone that drafts a QB (or worse yet, a WR) in the first round (or two). You get all bummed because someone's grabbed LT and Frank Gore and Adrian Peterson and you see TO, Randy Moss, Tom Dumba, er Brady, Payton Manning, and Drew Brees all sitting there ripe for the taking. DON'T DO IT!
Ultimately, you'll be much better off grabbing a solid RB duo first, a WR (or two), and then ... MAYBE ... consider a QB.
The point differential is really easy to see and history/precedent is behind me on this.

I wouldn't mind getting in on one of the slots if there's any extras. I like watching football{Steelers fan since 1995 FTW?] but I don't follow stats and...names much. Could be fun if there's extra slots, though. Don't wanna take any from someone who actually knows what they're doing. Hehe. =]

Was busy and couldn't be there to do the draft. I did sort of fool around with the auto-draft settings to organize my priorities.
My team is all set and I'm feeling pretty good about it. First up to get destroyed by my mighty Cavaliers? TYGOR

Yeah, yesterday was a comedy of errors for me. I'm sorta fairly happy with my one team that I've checked (I think I had 2 draft yesterday). I'm not too concerned, though; as I've said before, a lot of it comes down to the madness that is the regular football season. That guy who looks great today could have a broken rib tomorrow (oh hai Brett Favre).
