Fresh Mushroom Soup
Serves 6-8

1/4 cup butter (half a stick)
16 ounces sliced, fresh mushrooms
1-2 cloves garlic, minced
1/4 cup flour
1 - 14.5 ounce can chicken broth
1 cup water
1 - 14 ounce can evaporated milk
2-4 Tablespoons dried parsley
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon ground pepper

In a large saucepan, melt the butter. Add the mushrooms and garlic; cook and stir for about 5 minutes or until the mushrooms “sweat”. Stir in the flour, blending well. Slowly add the broth and water, followed by the milk. Bring to a boil, stirring constantly. Reduce the heat and simmer for 5 minutes. Add the parsley, salt, nutmeg, and pepper. Cook until the mixture is heated through.

Quick & Healthy Ham and Bean Soup

2 – 16 ounce cans navy beans, rinsed and drained (or as close as you can find)
1/2 cup diced ham
1 cup diced onion
1 cup diced celery
1 cup shredded carrots
3 cup water
1 teaspoon dried parsley flakes
1/4 teaspoon pepper
In a large saucepan, combine the navy beans, ham, onion, celery, and carrots. Add water, parsley flakes, and black pepper. Mix well to combine. Bring mixture to a boil. Lower heat. Cover and simmer 30 minutes or until vegetables are tender, stirring occasionally.


Mock Rice Pudding
(Why it’s called this I don’t know. It tastes just like oatmeal cookie batter!)

16 ounces small curd low-fat cottage cheese
1 small box dry instant vanilla pudding
8 ounces Cool Whip
1/4 cup raisins
1 teaspoon cinnamon

Mix together and serve cold.
