Just a question for someone who is better with mechanics than I am. For a UAC character fighting with open hands, I know that one rank of TWC gives +5 defense and that .5 training in TWC gives +15. But, if I understand the wiki correctly, additional training in TWC beyond .5 does give additional open-hand defense, right?

There's a small per rank contribution as well as that bonus. You can almost certainly find something better to do with your training points.
