What is generally consider the best armor setup for a new paladin. I'm thinking light armor on the chest, plate on the gloves, brig on the greaves, and chain on the head?

I prefer plate on the torso. It tends to take the most hits so having the heaviest armor there made sense to me. Light armor on the legs as leg damage is the least debilitating.

That is the approach I use as well. It prioritizes vital areas with heavy armor while still allowing a decent experience split.
• plate: cuirass (torso) - 33.8%
• brigandine: balaclava (head/eyes/neck) + gloves (hands) - 28.5%
• chain: vambraces (arms) - 22.1%
• light: greaves/pants (legs) - 15.6%
