Chili Competition? 06/22/2009 12:54 AM CDT
Soo everyone always thinks their chili is the best. I'd like to compare recipes really though :)

This is my mom's recipe, which I absolutely love (and it makes a ton, it could feed 6 people easily, so maybe cut it in half).

It is not particularly spicy, but cooking's all about experimentation, so add whatever you like :D

Ingredients:
3 BIG cans of diced tomatoes
3 cans of kidney beans
1 tiny can of tomato paste
1 large onion
1 potato
1 lb hamburger (1.5 if you like beefier chili)
2 chili seasoning packets
1 tbsp cumin
1 tbsp chili powder
1 tsp cinnamon
1 tsp sugar
1 packet hot chocolate
1 cup of strong coffee

Get a big pot, and start browning the hamburger in it.
Cut up the onion and add it to the hamburger.
Drain fat.
Cut up potato.
Add everything else.
Stir.

Eat with oyster crackers or a little cheese (or both!).

I loooooove chili and chili recipes. Putting coffee in sounds like a great idea.

Here's mine. This is meant to go in a big freaking huge pot-o-goodness and I like lots of meat in it so yeah it's a lot of stuff. I also love garlic, nuff said. Here it is:

1.5 lbs beef
3 small/medium red onions
garlic
chili powder
cayenne pepper (powder)
2 medium cans diced tomatoes
2 cans red kidney beans
1 can black beans
3 bell peppers - whatever color floats your boat
2 jalapeno peppers
1/2 small can tomato paste
1 can corn (not creamed)

Brown beef first and set aside (I like to drain it also). Chop up onions, mince garlic. (EDIT: I forgot to say an amount here. Use half a head of garlic, or whatever it's called. Hell yeah it's a lot, I love it) Add both to big pot with some olive oil (med/low heat). Salt. Stir often until the onions and garlic have browned (but not burned). Add the meat, season well with chili powder, cayenne pepper, if you're feeling really crazy garlic and onion powder too, why not.

Then add the tomatoes, black beans (both with the liquid) and red beans (drain first). Let it simmer a bit while you chop up the bell & jalapeno peppers. Throw those in. Do NOT separate the seeds from the jalapenos! Those go in the chili too. Let cook for another few minutes. Add tomato paste if you want.

Top it off with the corn (drain first). Let simmer for maybe 30 minutes. If it's too acidic add a little salt and a pinch of sugar. Adjust seasoning if needed.

Enjoy with crackers (I like those fancy whole-wheat things you are supposed to serve at parties or what-not), cheese, a little worcestershire sauce, and some sweet pickle relish. Don't knock it till you try it.

How many of you chocolate adding folks have family from the Cincinnati area? A quick glance at Rubytu's recipe is very nearly "Cincinnati-style" chili. (http://en.wikipedia.org/wiki/Cincinnati_chili)

Those are the two chains.

Here's the best one though:

As far as I know, none of my (very small) family has lived there or nearby. That said, I have no idea where mom's recipe came from, she's just been making it forever.

I'm trying to think of other recipes to post.
