In the sporadic tradition of our company, today is Extreme Labor Day Weekend Breakfast Friday. I brought in the trusty old electric skillet. On the menu this morning is Extreme Breakfast Tacos.

Taco Seasoning

I just made this recipe up this morning, but it should be similar to Hot Taco Seasoning you'd get in the store. I'll let you know after I cook it.

1 tbsp. cumin
1 tsp. salt
1 tsp. ground pasilla chili pepper
1 tsp. ground chipotle chili pepper
1 tsp. ground arbol chili pepper
1/2 tsp. ground cayenne chili pepper
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. paprika
1/4 tsp. coriander (I love coriander, so I put it in most rubs/seasonings I do)
a couple shakes of oregano (maybe about 1/2 tsp. It's a big bottle).

I'm going to cook a pound of ground beef, drain, stir in seasoning with a bit of water, let simmer for awhile.

We're also scrambling eggs, I've got a blend of shredded cheeses (cheddar, monterey jack, quesedilla cheese, etc.).

There's some pre-cooked hickory-smoked bacon and maple sausage, I think someone's bringing an onion, and we of course have maple syrup and the all-important corn tortilla taco shells.

My breakfast taco's going to have half a sausage link at the bottom, egg, cheese, taco meat, and some crumbled bacon. And a drizzle of maple syrup on everything. Why? Because I'm crazy like that.
