So I'm currently hunting Stompers, and they're great for most things but I'm looking for something that will train skinning as well. Current stats/skills:

Strength : 50 Reflex : 60
Agility : 70 Charisma : 40
Discipline : 70 Wisdom : 45
Intelligence : 50 Stamina : 53
Shield Usage: 460
Light Armor: 470
Chain Armor: 400
Defending: 530
Parry Ability: 459
Small Edged: 500
Light Thrown: 450
Evasion: 635
Stealth: 600
Skinning: 500

Does something in P5 fit the bill? Something near Riverhaven/Crossing would work best as well since I'd like to be able to do Alchemy work orders, but anywhere on the mainland is fine.

I would say southern celps. You have enough evasion for apes, but your shield is lower. Plus I you would have some issues with them parrying your blades.

When I started in stompers, I think I alternated between shalswar and damaska boars. Shalswar had really slowed down but were safe and taught some.. Damaska boars taught great but I had to stick to the shadows to avoid axes from the goblins on their back and switch rooms whenever I killed one to avoid the goblin after it fell off.

Your evasion is pushing the upper limit, but try warklins/maulers.

They're slice resistant.

I'd suggest Dragon Priests, which may be a tad easy, but probably still teach.
