So, out of curiosity-- can a Kaldar ride a horse at sixteen hands high? I know that the smaller races have to have horses or ponies KNEEL for them, but what about the larger races?

Larger races don't have restrictions on horse size, so long as it is a horse and not a pony. A Kaldar is fine at 16 hands.
